This is a very popular white miso that is sold only during the winter season every year. The distinctive feature of our white miso is that it has a low salt content of 7%, and the sweetness and umami of the koji are the deciding factors. The koji accounts for 80% of the soybeans (not genetically modified), and the way we make this "koji" is a skill that only our professionals can master.

Our white miso has the perfect amount of sweetness and richness of koji, making it a unique white miso. It can be used in place of sugar in ozoni (rice cake soup) and other simmered dishes. It is a completely additive-free white miso with no artificial seasonings.

*If you are not using it, storing it in the freezer will stop the fermentation and you can use it for a long time regardless of the expiration date.
