This is a very popular white miso that is sold only in the winter every year. The characteristic of our white miso is that it has a low salt content of 7%, and the sweetness and umami of the koji are the deciding factors. It contains 80% koji compared to soybeans (not genetically modified), and the way we make this "koji" is a skill that we, the professionals, can achieve.

Our white miso has the perfect sweetness and richness of koji, making it a one-of-a-kind white miso. It can be used in place of sugar in ozoni and other simmered dishes. It is a completely additive-free white miso with no chemical seasonings.

*If you are not using the product, storing it in the freezer will stop the fermentation and you can use it for a long time regardless of the expiration date.

*This product will be delivered by refrigerated delivery, so a refrigerated delivery fee of 250 yen will be charged in addition to the shipping fee.
