This premium dipping sauce, crafted to perfectly complement Misawa Seimen’s seasonal new soba, has been refined and is back this year better than ever.
At its base is a traditionally brewed soy sauce, long-aged in wooden barrels. It is layered with rich umami from bonito flakes and soda-bushi from Kochi and Kagoshima, along with dried sardines and kombu from Hokkaido.
The sweetness comes only from hon-mirin and brown sugar made from sugarcane grown in Tokunoshima. The result is a gentle, clean sweetness with a naturally aromatic finish, never heavy on the palate.
Of course, no artificial additives or chemical seasonings are used. By relying solely on the natural power of carefully selected ingredients, this sauce enhances not only soba, but also a wide range of dishes—such as tamago-kake gohan, simmered dishes, udon, and stir-fries—bringing a refined depth of flavor to every bite.
Originally developed exclusively for Misawa Seimen’s premium year-end soba, this sauce received such an enthusiastic response that it is now available year-round.
