All ingredients are traceable and grown under contract with producers. The production method is focused on using "raw koji," the key ingredient in miso, and does not use heat treatment or alcohol. Instead, the natural aging method uses the power of live yeast and enzymes to preserve the original richness and flavor of miso, a representative fermented food.

The difference between this miso and "Naturally Brewed Raw Koji Miso" is the koji blend. This miso has a higher ratio of koji, which gives it a smooth texture thanks to the sweetness of the koji.

[How to save]
Be sure to store in the refrigerator (below 10°C).

*As this is raw miso, the bag may swell and turn red as it ferments and matures, but this does not affect the quality. Freezing it will prevent fermentation, so it will not swell and the color will not change.
