The raw materials are "Koshihikari rice (reduced pesticide-free)" from Tokushima, procured from contracted farmers. Made with 100% Tokushima Koshihikari rice.

The koji is made in a room called the koji making room, where it is slowly brewed over a period of three days to create a powerful raw koji. Please try out the power of koji by using raw koji, the source of fermentation, in making miso, amazake, and salt koji.

*This product will be delivered by refrigerated delivery, so a refrigerated delivery fee of 216 yen will be charged in addition to the shipping fee.

Please note: We will ship freshly made "Nama Koji", but there may be cases where the product is out of stock. If you are in a hurry, please check by email or phone. Also, since it is raw, we will prepare it as fresh as possible, so it may take 4 to 5 days to arrive. Please "keep frozen" after it arrives. When you are ready to use it, thaw it naturally or in the refrigerator.
